Cooking Shortcut Tips

In my previous post, I mentioned a cooking class I went to last week with High Hopes in High Heels. The cooking instructor was wonderful. She provided some great tips for us on products to use and cooking methods that would make cooking easier and faster.

1. Garlic paste. It comes in a tube and can be found in the produce section. This is much easier than peeling and mincing garlic, but tastes much better than the pre-chopped garlic that is jarred in olive oil. And on this note, why not try out those herb blends found in a tube. No worries about fresh herbs going bad or not using the whole bunch.

2. Dry vermouth instead of white wine. Often recipes call for dry white wine. Our instructor recommended buying a bottle of dry vermouth as it can be stored at room temperature and has a much longer shelf life once the bottle is opened.

3. Better than Bouillon. Instead of buying boxes and cans of broth that also don't last long once opened, our instructor suggested this Better than Bouillon product, which is a concentrated base that is more flavorful than broth.

4. Tubed tomato paste. This one I had already discovered, but look for tube of tomato paste, usually found in the spaghetti sauce, canned tomato aisle. It looks like a tube of toothpaste and will last forever in your fridge. No more opened cans of unused tomato paste in your fridge again.

5. Cooking rice. For a small number of guests (4-6) treat rice like pasta. Bring a large pot of water to a boil, and add 1 to 1 and half cups rice. Cook 10-12 minutes, until tender, then drain in a colander or fine mesh strainer. For large groups, try the method of taking equal amounts of rice and water. For 10 people, use 3 cups of Uncle Ben's Original Converted Rice - NOT INSTANT! and 6 cups of water. Combine in a baking pan. Cover tightly with double layer of aluminum foil. Bake at 450 for 20-25 minutes. Check to make sure all water is absorbed. Rice will be tender, fluffy, and separate.

White Sangria

Here's a sangria recipe if you prefer white wine or just want to try something a little different. Recipe courtesy of Ellie Krieger.



Ingredients

1 (750-ml) bottle white wine (pinot grigio or sauvignon blanc)

1/2 cup brandy

1/4 cup orange liqueur (Cointreau or triple sec)

2 tablespoons superfine sugar (you could use simple syrup instead)

1/2 cup orange juice

1/2 cup club soda

1 medium unpeeled orange, sliced

1 unpeeled lemon, sliced

1 unpeeled lime, sliced (I added this)



Directions

In a pitcher combine the wine, brandy, orange liqueur and sugar and stir until the sugar is dissolved. Stir in the orange juice and club soda. Add the orange and lemon slices, and chill. Serve over ice.

Pomegranate Sangria

This is my go-to red sangria recipe. It's always a big hit. This recipe has been altered from a Bobby Flay recipe. If you're making this for a party, I recommend making it a day in advance. All the flavors really combine well and the fruit can marinate.



Ingredients

1 bottle fruity red wine, such as a Rioja or merlot

2 cups pomegranate juice

1/2 cup brandy

1/2 cup Triple Sec

1/4 cup simple syrup (equal amounts sugar and water, heated until sugar dissolves, cooled)

1 large orange, halved and thinly sliced

1 lime, thinly sliced

1 lemon thinly sliced

1 cup red grapes, sliced in 1/2



Directions

Combine all ingredients in a pitcher, cover and refrigerate for at least 4 hours or up to 48 hours before serving. Serve over ice.

Barefoot Wine and Bubbly

So I had seen Barefoot Wines in the store, but had never tried them. Then last weekend I volunteered at a local art festival, Chalk Walk, where we sold wine and beer. Barefoot Wines had generously donated the wine and had local reps there serving. I tried their Moscato. It was delicious, very sweet and fruity. Perfect on a hot, summer day. I have since purchased the pinot grigio for cooking and the riesling. The best thing about the wines are they not only have won a bunch of awards, but they are very affordable. My store has them for $6.99 a bottle. Check out all of their wines here.

Pepper Pork Chops with Wine Sauce

This is a quick, easy recipe that would also be good with chicken or fish. This is a take on a Ellie Krieger recipe.

Ingredients:
4 boneless pork loin chops
dijon mustard
fresh cracked pepper
olive oil
1/2 cup low-sodium chicken broth
1/2 cup dry red or white wine
Kosher salt to taste

Spread a little dijon mustard on both sides of the pork chops and rub with black pepper, as much as you like. Heat the oil in a large skillet over medium-high heat. Cook the pork chops on both sides until browned and the inside is no longer pink, but still juicy, about 10 minutes total.

Transfer the meat to a plate and cover loosely with foil to keep warm. Add the broth and wine to the pan and cook over medium-high heat, scraping up any brown bits from the pan. Continue to cook until the sauce has reduced to about 1/2 cup, about 8 minutes. Pour the sauce over the meat, season with salt, and serve.

Argentinian Wines

Last week my husband and I attended a wine tasting at our favorite local restaurant, Gino's. The night featured wines from Argentina. We ended up going by their Wine Shoppe and picking up three bottles of wine with two of them being Argentinian reds we tasted that evening. I recommend checking these out. Both are very affordable, under $10.

Condor Peak Merlot - It's from the Mendoza region; light and fruity on the nose; rich, medium body with hints of black cherry and coffee flavors.

tierra adentro - also from the Mendoza region; very nice table red wine; well-balanced; deep fruity flavors; pairs nicely with red meats

Keep in mind I am no wine connoisseur, but I promise both of these are very smooth, enjoyable wines.

Wines for Summer

At least once a week you can find my husband and/or me at this family Italian restaurant, Gino's that is about a mile from our house on North Armenia Ave. in Tampa. It has been around forever and offers great, homemade Italian favorites and they boast a great beer and wine menu. Actually, they opened a great wine shoppe not too long ago.

Last night we attended a wine tasting event there that featured wines for the summer, all white wines of course, which didn't bother me in the least. A lot of Riesling, Pinot Grigio, Sauvignon Blanc and sparkling (my personal favorite). I of course had my husband purchase a few of the ones we sampled and I will definitely be going by there throughout the summer to pick up the others.

The ones we brought home were a Prosecco, a nice Italian sparkling that I had never tried; a lovely German Riesling from Fountain Blue winery, sweet and refreshing during the hot summer months and Twin Vines Vihno Verde, a white wine from Portugal. All reasonably priced.

Gino's has a lot of other events planned for the summer including a beer and food pairing dinner and a beer tasting. I definitely suggest everyone check out this Tampa jewel. They even have a Facebook page now.

Pomegranate Sangria - Shower Recipe 3

This pomegranate sangria was a recommendation by my boss. It is a Bobby Flay recipe that I modified a little bit. This recipe uses two bottles of red wine, so make sure you have a big enough pitcher, or split between two. I actually bought this plastic pitcher with a sealed lid for easy transport. It was also ideal for making in advance.

Ingredients:
2 bottles of fruity red wine, a Spanish rioja or a French red should be good
2 cups pomegranate juice
1/2 cup simple syrup, cooled (Place 1/2 cup water and 1/2 cup sugar into a saucepan. Heat over low-medium heat until all the sugar dissolves. Stirring occasionally.)
3/4 cup triple sec
3/4 cup brandy
1 Granny Smith apple, cored and sliced
1 orange, sliced
1 lemon, sliced

Place the fruit on the bottom of the pitcher. Pour in the rest of the ingredients, stir well. Cover, place in the refrigerator for atleast 4 hours, or up to 48 hours. Serve over ice.
