Gluten-Free Baking - A Journey into New Territory

Gluten-Free foods are taking their place in the world these days. We are all becoming more aware of gluten, gluten intolerance, celiac (or coeliac) disease, and what this means for so many people. While I am not gluten intolerant, I often cook and bake for functions, locally. Last year I was asked to provide little treats for a Princess Party, put on by the Dacotah Prairie Museum. Accompanied by a "queen", little girls from tots to teens were invited, to learn about the lives of real princesses. They were taught how to wave properly, and curtsey.

Little girls hear the word "princess" and go dreamy-eyed. The program was sold out. I made lots of little treats, but found out one of the little princesses and her queen were gluten intolerant, and couldn't partake of many of the little treats. This was an intolerable state of affairs! I decided I needed to learn about this disease, be aware of what was involved, and provide alternatives that would be tasty and exciting.

Over the past year, I have been trying out different gluten-free flour mixtures, and making lots of goodies, mainly from my own normal recipes, converted by simply substituting gluten-free flour and adding xanthan gum. In the main, they have been a whopping success. In my honest opinion, as someone who has been baking for 42 years, some of the cakes, fruit or nut loaves turn out more moist and tender than when made with wheat flour; a very happy discovery, without a doubt. The "queen" mentioned above, works at the museum, so I took an afternoon to talk with this young woman and learn more about what was involved. I also had baked one of my favorite coffeecake recipes, gluten-free and took it for her and the museum staff to try. They all loved it; moist and tender and full of flavor. The young woman was happy with my experiment, as was I.

Another great help along the way was finding Shauna Ahern's "Gluten Free Girl" website. I have studied her site extensively and learned all sorts of things there. I mixed up her gluten-free flour mixture to experiment with, as well as trying out one of her bread recipes; another success. I took some of the bread for the woman at the museum to sample, as well as a slice I slathered with homemade pesto and cheese and broiled. She exclaimed, "This is the best bread I've tasted since going gluten free!"

This coffeecake recipe was given to me by my best friend of 54 years, and is a terrific recipe, no matter which flour you choose. This is the original recipe; for gluten-free, I substituted a gluten-free flour mixture made up of 6 cups brown rice flour, 2 cups potato starch and 1 cup tapioca starch. I used this mixture measure for measure in this recipe, and added 1 teaspoon of xanthan gum to the sifted dry ingredients. Be sure to check the labels of ingredients for hidden wheat when making this Gluten-Free!

Bundt Coffeecake

1 cup unsalted butter

1½ cups sugar

2 eggs

1 cup sour cream

1 teaspoon vanilla

½ teaspoon baking soda

2 cups all-purpose flour

1 teaspoon baking powder

½ teaspoon salt

½ cup chopped nuts; walnuts or pecans are good

2 teaspoons sugar

½ teaspoon cinnamon

Preheat oven to 350 degrees. Cream the butter and sugar until light. Add the eggs, sour cream and vanilla and mix well. Sift together flour, soda, baking powder and salt. Add the dry ingredients to the wet and mix well. Grease a 10-inch tube or bundt pan.

Mix together the chopped nuts, the 2 teaspoons sugar and the cinnamon. Sprinkle ½ of this topping into the greased pan. Put in half the batter - this requires "plopping" small spoonfuls of the batter into the pan as the batter is very thick. Then carefully smooth it to fill in any gaps. Tapping the pan on the countertop helps. Pour on the rest of the "topping" and again plop spoonfuls into the pan till all batter is used.

Bake for 1 hour, or until a knife inserted in the center comes out clean. Allow to cool on a rack for 10 minutes before removing from pan. Sprinkle powdered sugar over the cake if desired. Serves 12 to 16.

GLUTEN-FREE OPTION: Replace the flour with your preferred gluten-free flour mixture and add in 1 teaspoon xanthan gum. Mix and bake as directed. (Sometimes baking is a little bit longer than normal, but since the texture and moistness is so wonderful, I can wait those few more minutes!)

Try this recipe, either way, and you won't be sorry!

{Recipe} Gooey Hot Cocoa Cookies


 I love a good cookie and this one is fantastic!  I slightly adapted the recipe from Baked Bree.  I wanted my cookies to have a gooey chocolaty middle so I used Hershey's Chocolate Baking Melts.  Have you seen these baking melts?  They are more like chocolate wafers and they are perfect for stuffing inside a cookie. They took my cookie over the top.

 I made these for my family to try and they loved them.  They are a perfect cookie for a cup of hot cocoa or even a glass of milk.

Gooey Hot Cocoa Cookies

Ingredients
  • 2 sticks room temperature butter
  • 1 cup sugar
  • 2/3 cup brown sugar
  • 2 eggs
  • 1 teaspoon vanilla
  • 3 1/4 cups flour
  • 4 packages Hot Chocolate Mix (not sugar free)
  • 1 teaspoon salt
  • 1 1/4 teaspoon baking soda
  • 1 cup marshmallow bits
  • 1 cup white chocolate chips
  • baking melts
Instructions
  1. Preheat oven to 350 degrees.
  2. Line a large baking sheet with a silpat liner or parchment paper.
  3. In a stand or electric mixer, beat butter and sugars until well combined.
  4. Add eggs and vanilla beating until well combined.
  5. Place flour, hot cocoa mix, baking soda and salt into a large mixing bowl. Stir to combine.
  6. Slowly add to the wet ingredients along with white chips until just combined.
  7. With a medium cookie scoop, scoop the dough onto the prepared baking sheet about 1 inch apart.
  8. Using your thumb, press a well into each cookie.
  9. Place two baking melts into the well of each cookie.
  10. Place another scoop of cookie dough on top and press edges gently.
  11. Bake for 10 to 12 minutes, until edges are just golden brown.
  12. Allow cookies to cool on pan 5 minutes before moving them to a wire rack to cool completely.

Pumpkin Spiced Muffins

More pumpkin spiced items for your Fall season.

These muffins are slightly adapted from Ellie Krieger's Pumpkin Pie Muffins. I changed up the spices and used maple syrup instead of molasses.


Ingredients:
1 cup all-purpose flour
1 cup whole-wheat flour
1 tsp baking soda
½ tsp salt
1 tsp pumpkin pie spice
1 tsp ground cinnamon
¾ cup tightly packed light brown sugar
3 Tbsp maple syrup
¼ cup canola oil
2 large eggs
1 cup pumpkin puree
1 tsp pure vanilla
¾ cup low-fat buttermilk

Directions:
Preheat the oven to 400 degrees. Coat a 12-cup muffin pan with cooking spray.

In a medium bowl, whisk together both flours, the baking soda, salt and spices. In a large bowl, whisk together the sugar, maple syrup, oil and one of the eggs until combined. Add the other egg and whisk well. Whisk in the pumpkin and vanilla. Stir in the flour mixture in two batches, alternating with the buttermilk, just until combined. Pour the batter into the prepared muffin pan, filling each cup about two-thirds full. (From here you could sprinkle the tops with a little cinnamon and sugar, or pumpkin seeds, as Ellie Krieger does in her recipe. You could also wait until you take the muffins out of the oven and sprinkle with a little powdered sugar.) Tap the pan on the counter a few times to remove any air bubbles. Bake until a toothpick inserted in the center of one of the muffins comes out clean, about 20 minutes.

Let the muffins cool in the pan for five minutes and then take them out of the pan to cool on a wire rack. You could enjoy the warm or let cool completely and store in an airtight container in the refrigerator for up to 3 days or in the freezer for up to 3 months.

Pumpkin Granola

'Tis the season... pumpkin season that is. It's official; Starbucks' pumpkin spiced latte has returned to much anticipation while my personal favorite, Dunkin Donuts' pumpkin donuts, are also back. So I am jumping on the bandwagon and have come up with a pumpkin granola recipe to share with all of you.


Ingredients:
3 cups old fashioned oats
1 tsp pumpkin pie spice
½ tsp ground cinnamon
¼ tsp salt
½ cup chopped or sliced almonds
½ cup chopped walnuts
¼ cup maple syrup
¼ cup pumpkin puree
1 tsp vanilla
½ cup dried cranberries (or raisins, your preference)
¼ cup roasted sunflower kernels

Directions:
Preheat oven to 300 degrees. Line a large baking sheet with foil or parchment paper. Set aside.

In a large bowl, combine oats, pumpkin pie spice, cinnamon, salt, almonds and walnuts.

In a small bowl, combine maple syrup, pumpkin puree and vanilla. (Here’s a tip when measuring sticky ingredients like maple syrup, honey, molasses, etc. Spray the measuring cup with nonstick spray first. The syrup will pour out easier.)

Pour the pumpkin mixture into the oat mixture and stir until coated well. Add the cranberries to the mixture and toss again.

Spread the granola onto the baking sheet and bake until golden brown, stirring occasionally, about 30 minutes total. (I stir every 10 minutes.) After 20 minutes, add the sunflower seeds and stir again.
Finish baking for the remaining 10 minutes.

Remove from the oven and transfer the sheet to a cooling rack and let cool completely. Store the granola in the refrigerator in an airtight container for about 2 weeks.

Recipe: Nutella Filled Sugar Cookie Cups



Earlier this summer, I was looking for a recipe to take to a bake sale and cake walk.  I wanted something different that didn't require a lot of time.  As I was looking through some of my favorite blogs, I came across this recipe on The Sweet Spot and knew instantly that this was the recipe I was looking for.   I could have easily used a tube of refrigerated sugar cookie dough to make this  really easy, but I decided to go the extra step and make Paige's sugar cookie recipe.  

Keeping my kids away from these was hard because they love anything Nutella so much that when one of them won the cake walk, out of all the wonderful goodies there, she chose these little delightful cups of goodness.

Nutella Filled Sugar Cookie Cups

Ingredients
  • 2 3/4 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1 cup butter, softened
  • 1 1/4 cups sugar
  • 1 egg
  • 1 tsp vanilla extract
  • Nutella
  • toffee bits, optional
Instructions
  1. Preheat oven to 375 degrees.
  2. Spray a mini muffin pan generously with cooking spray.
  3. Stir together flour, baking soda, baking powder; set aside.
  4. Cream together butter and sugar until smooth and fluffy.
  5. Beat in egg and vanilla.
  6. Gradually stir dry ingredients into the butter mixture.
  7. Roll dough into walnut sized balls and place them in the muffin pan.
  8. Bake for 8-10 minutes or until golden.
  9. Let cool for one minute then take a teaspoon size measuring spoon and press down making an indention on each cookie cup.
  10. Fill with Nutella and top with toffee bits, if using.

Recipe: Apple Dumplings



I have been wanting to make Apple Dumplings for some time now when I saw the recipe posted on The Pioneer Woman's blog several years ago.  I finally had the opportunity to do so and OMG!  Why....why....did it take so long for me to do so is beyond me.  These dumplings are so beyond good...they are warm and comforting yummy good.  The only change that I made to the original recipe was replacing the Mountain Dew with Sprite.  Come Fall, I will be making these again...and again....and again....

Apple Dumplings

Ingredients
  • 2 whole Granny Smith apples
  • 2-8 oz cans crescent rolls
  • 2 sticks butter
  • 1 1/2 cups sugar
  • 1 tsp vanilla
  • cinnamon, to taste
  • 1-12 oz can lemon lime soda (Sprite)
Instructions
  1. Preheat oven to 350 degrees.
  2. Generously butter a 9x13" pan.
  3. Peel and core apples.
  4. Cut each apple into 8 slices each.
  5. Roll each apple slice in a crescent roll.
  6. Melt butter, then add sugar and barely stir.
  7. Add vanilla, stir and pour entire mixture over apples.
  8. Pour lemon lime soda around the edges of the pan.
  9. Sprinkle with cinnamon and bake for 40 minutes.
  10. Serve with ice cream and sauce from the pan.

{Cooking with Kids} Elephant Biscuits



My sister and her three sons recently came for a visit for a month.  My girls had lots of fun playing and swimming with their cousins but as you know keeping them entertained is a constant battle.  I saw this cute idea on a recent blog I found, The Real Thing with the Coake Family, and I knew this would be a hit with my kiddos.  We had lots of fun making these adorable elephant biscuits and almost as fun eating them.  We made these a couple of times with different types of canned biscuits.  The first time we made them I only had jumbo layered biscuits.  The second time we made them with smaller biscuits (the kind you get 4 cans in a pack).  The smaller biscuits worked a bit better.

Elephant Biscuits

Ingredients
  • 1 can of 10 count biscuits (one elephant requires 2 biscuits)
  • cinnamon sugar
  • craisins or raisins
Instructions
  1. Preheat the oven as suggested on the package instructions.
  2. Spray a baking sheet with non-stick spray.
  3. Start with two biscuits.
  4. Cut one of the biscuits into thirds leaving a long strip in the center. This will be the ears and trunk.
  5. Place the first biscuit on the baking sheet.
  6. Place the two rounded cut pieces on either side of the other biscuit forming the ears of the elephant.
  7. Add the strip to the top of the biscuit to make the trunk.
  8. Repeat with the remaining biscuits.
  9. Sprinkle each head with cinnamon sugar.
  10. Place two craisins/raisins on each biscuit for eyes.
  11. Bake in the oven until golden brown.

Recipe: Fudgy Chocolate Chip Toffee Bars


OMG!  These are the most rich chocolaty yummy delightful goodness that I have ever put in my mouth.  These are not for the faint of heart or for those on a diet.  These are "I have had a bad day and I am going to stuff these in my face to make it go away" bars.  This is what you make your BFF when she needs to vent to you bars. These bars have graham crackers, chocolate chip cookie dough, chocolate chips and sweetened condensed milk.  See what I mean...not for dieters!   

So, make these and savor every single bite but don't blame me when you get on the scale the next day and see the five pounds you gained.

Fudgy Chocolate Chip Toffee Bars

Ingredients
  • 1/2 cup butter, melted
  • 2 cups graham cracker crumbs (32 squares)
  • 1 bag toffee bits (1 1/2 cups)
  • 1 roll refrigerated chocolate chip cookies
  • 1 bag semi-sweet chocolate baking chips (2 cups)
  • 1 can (14 oz) sweetened condensed milk
  • 1 tbsp butter
  • 1 tsp vanilla
Instructions
  1. Heat oven to 350 degrees. (325 degrees for dark or nonstick pan).
  2. Spray bottom only of 13x9-inch pan with non-stick cooking spray.
  3. In medium bowl, stir 1/2 cup melted butter, 1 1/2 cups of the cracker crumbs and 3/4 cup of the toffee bits.
  4. Press mixture evenly in bottom of pan.
  5. Refrigerate about 15 minutes or until firm.
  6. Meanwhile, let cookie dough stand at room temperature 10 minutes to soften.
  7. In a saucepan, heat chocolate chips, milk and 1 tablespoon butter over medium heat, stirring frequently, until chips are melted and mixture is smooth.
  8. Remove from heat; stir in vanilla.
  9. Spread mixture over cracker crust.
  10. In medium bowl, break up cookie dough.
  11. Mix in remaining 1/2 cup cracker crumbs with wooden spoon until well blended.
  12. Crumble mixture evenly over chocolate layer.
  13. Sprinkle with remaining 3/4 cup toffee bits.
  14. Bake 25 to 35 minutes or until golden brown.
  15. Cool completely, about 2 hours.
  16. For a firmer bar, refrigerate 30 minutes longer.
  17. For bars, cut into 8 rows by 4 rows.

Recipe: Mini Zucchini Cakes


I am being overrun with squash and zucchini which is fine by me.  Our family has been enjoying the bounty of our friend's garden because they have been so generous to share with us.  It has been fun trying new recipes, which is one of my favorite things to do.  I came across this recipe on The Curious Country Cook.  She called them Zucchini Bites and I have also seen them as Zucchini Tots.  Whatever you want to call them, they are super delicious and a great side dish to summer meals.  I made slight changes to the recipe.  Instead of dicing the onion, I also grated it.  This gave these sweet little cakes a subtle onion flavor and no bits of onion for some of my picky eaters to complain about.

I still have a lot more squash and zucchini to use so watch for some more fabulous goodness.  Enjoy!




Mini Zucchini Cakes

adapted slightly from The Curious Country Cook
Ingredients
  • 1 cup zucchini, grated
  • 1/3 cup onion, grated
  • 1 egg
  • 1/4 cup cheddar cheese, shredded
  • 1/4 cup bread crumbs
  • salt and pepper, to taste
Instructions
  1. Preheat oven to 400 degrees. 
  2. Spray a mini-muffin tin with non-stick spray, set aside. 
  3. Grate the zucchini and onion. Place both in a dish towel to squeeze out the excess water. Do NOT skip this part, or the middle of the zucchini cakes will be really soggy. 
  4. In a bowl combine the egg, cheese, bread crumbs, zucchini, onion, salt and pepper. 
  5. Using a spoon or a cookie scoop, fill the muffin cups to the top. 
  6. Bake for 15-18 minutes, or until the top is browned and set.

Recipe: Cinnamon Roll Casserole


I am always on the hunt for yummy breakfast dishes that I can make when I have extra time on the weekends and this one definitely fits that requirement.  When I came across this recipe on The Dishy Decorator's blog, I just knew I had to try it so I made it for Fathers Day breakfast and it was a huge hit with my family.  It is like a bread pudding and is oh so tasty and super easy to make.

I only made a few changes to the recipe.  First, instead of cutting all the rolls into eight pieces, I did the first layer and can into four pieces, then on the second layer and can, I cut into eight pieces and filled in any bare spots.  I didn't have any heavy cream, so I used 1/4 cup half and half and 1/4 cup whole milk.  Instead of pecans, I used walnuts.  


This dish is so good and easy to make that I will be making this for our VBS volunteers and even for our school staff.  Enjoy!



Cinnamon Roll Casserole

Ingredients
  • 2 tbsp of melted butter or baking spray
  • 2 cans (12.4 oz each) refrigerated cinnamon rolls with icing
  • 4 eggs
  • 1/2 cup heavy whipping cream
  • 2 tsp ground cinnamon
  • 2 tsp vanilla
  • 1 cup chopped pecans (or walnuts)
  • 1/4 cup maple syrup
Garnish
  • Icing from cinnamon rolls
  • Maple syrup (if desired)
Instructions
  1. Heat oven to 375°F.
  2. Pour melted butter into ungreased 13x9-inch (3-quart) glass baking dish.
  3. Separate both cans of dough into 16 rolls; set icing aside.
  4. With the first 8 rolls, cut each roll into 4 pieces; place pieces over butter in dish.
  5. With the last 8 rolls, cut each roll into 8 pieces, making sure to fill in any bare spots and then just layering on top.
  6. In a medium bowl, beat eggs. Beat in cream, cinnamon and vanilla until well blended; gently pour over roll pieces.
  7. Sprinkle with pecans; drizzle with 1/4 cup syrup.
  8. Bake 20 to 28 minutes or until golden brown.
  9. Remove from oven and cool 15 minutes.
  10. Meanwhile, remove covers from icing; microwave on Medium (50%) 10 to 15 seconds or until thin enough to drizzle.
  11. Drizzle icing over top.
  12. If desired, spoon syrup over individual servings.

Recipe: Quick and Easy Berry Cobbler





I was recently looking for a quick cobbler to make for our first cookout of the summer.  I have a peach cobbler recipe that I love, my mom's Peach Cobbler, but I didn't have any peaches available.  When I came across this recipe on Pinterest, I couldn't believe it only took four ingredients.  That's right....four ingredients!  Four ingredients that make the most wonderful berry cobbler...especially when a scoop (or two) of vanilla ice cream is added on top!


I have already made this cobbler twice.  It is just that good.  The first cobbler I made was with wild cherries and strawberries.  The second cobbler was with strawberries and blackberries.  Both were super good, but I really liked the cherries/strawberries best.

Quick and Easy Berry Cobbler

{Jennifer/Living a Changed Life}

Ingredients
  • 2-14 oz bags frozen berries (I used cherries and strawberries)
  • 1 box white or yellow cake mix
  • 1 can lemon/lime soda
Instructions
  1. Preheat oven to 350 degrees.
  2. Spray a 9x13" pan with non-stick spray.
  3. Place the frozen berries in the pan.
  4. Sprinkle the cake mix over the berries, covering the berries completely with the mix.
  5. Pour the soda over the cake mix. DO NOT STIR.
  6. Place in the oven and cook for about 30 minutes or until golden brown.

Recipe: Baked Cinnamon Breakfast Bites





My girls love to have anything other than cereal for breakfast.  We love muffins, biscuits, eggs.  I try to oblige when I can, but sometimes I just don't have the extra time in the morning.  When I came across this recipe on the blog Oh My! Sugar High, it reminded me of one our family favorite breakfast treats, Cinnamon Biscuit Balls.  These little breakfast bites are very similar, but the crushed crispy rice cereal gives them a slight crunchiness.  I rolled the bites the night before and placed them on a baking sheet and put them in the refrigerator.  The next morning, while the oven was preheating, I dipped them in butter and rolled them in the cinnamon-sugar mixture.  Super simple and an easy prep!  


My girls loved them!  They made for an easy and tasty breakfast.  These would be a great after school treat or even a treat in the lunchbox.    To make them a bit healthier, next time I make them with whole wheat flour.

Baked Cinnamon Breakfast Bites
{original recipe by Oh My! Sugar High}
Ingredients
  • 1 1/3 cups AP flour
  • 1 cup crisp rice cereal, coarsely crushed
  • 2 tbsp plus 1/2 cup sugar, divided
  • 3 tsp baking powder
  • 1/2 tsp salt
  • 1/4 cup butter-flavored shortening (I used regular)
  • 1/2 cup milk
  • 1 tsp ground cinnamon
  • 1/4 cup butter, melted

Instructions
  1. Preheat oven to 425 degrees.
  2. Mix flour, crushed cereal, 2 tablespoons sugar, baking powder and salt in large bowl.
  3. Cut in shortening with pastry blender or fork until the mixture resembles coarse crumbs.
  4. Add milk and stir just until moistened.
  5. Roll dough into approximately 2 1/2 dozen 1 inch balls.
  6. Mix cinnamon and remaining sugar in a small bowl.
  7. Drop balls into melted butter and roll in cinnamon sugar mixture.
  8. Place balls slightly apart onto greased baking sheet.
  9. Bake for 15-18 minutes or until inserted toothpick comes out clean.
  10. Cool for a few minutes in pan on wire rack before removing.
