Must Try Tuesday: November 15, 2011

It feels like only yesterday it was hot and dry here....oh wait...that was yesterday!  Last week we had cooler temperatures but this week we are back in the 80's.  I thought we were going to have some fall like temperatures from here on out, but I guess not.  And can you believe it?  Thanksgiving is next week.  Crazy!

I found a ton of great recipes this week.  Here they are!

Recipe: Crock Pot Soup


First, let me start off by saying...please excuse my pictures.  The girls and I came home from a very long day of school and after school activities.  We were all hungry and I needed to get food on the table as soon as possible or my children would have fired me as their mother.  So, I was only able to snap a few pics of this most delicious soup while it was still in the crock pot.  Don't let my pictures deter you from making one of the easiest and tasty soups that I have had in a while.  Full of flavor and warming to the soul...this soup is fantastic!  If you are short on time but want to get something in the crock pot...this recipe is for you!  My kids ate it up and wanted more.  It makes a large amount so it will feed many hungry people with a hearty appetite or you can freeze the leftovers for a quick meal later.  I served my soup with some tortilla chips, shredded cheese and sour cream.  My oldest daughter dipped flour tortillas in hers.  I liked mine with a little salsa verde on it for a bit more "kick."  

I found this recipe on Pinterest but it did not have a source attached to it.  If this is your recipe let me know, so I can give you credit.  

I loved how super simple this recipe was to make and it only used a few ingredients, so I will be putting this on our menu more often.  I will update the pictures soon so they do justice to this awesome soup!

Crock Pot Soup

Ingredients
  • 1 can diced tomatoes with chilies
  • 1 can white beans, drained and rinsed (or black beans, pintos,etc.)
  • 2 cups frozen corn (you can also use canned corn)
  • 2 frozen chicken breasts
  • 1 8 oz package cream cheese
  • 1 package Ranch Dressing mix
  • 1 tbsp cumin (we love cumin, so adjust according to your family's taste)
  • 1 tsp onion powder
  • 1 tsp chili powder
  • 1 can diced chilies, optional

Instructions
  1. Put all ingredients in the crock pot.
  2. Cook on low for 6 to 8 hours.
  3. Remove chicken breast and shred.
  4. Return on pot and stir.
  5. If the soup is too thick for your liking, you could add warmed chicken stock to make it the consistency you prefer.

Serve with tortilla chips, sour cream, shredded cheese and salsa on top.

Must Try Tuesday: November 8, 2011

This week, I am posting on the right day.  Things were so hectic last week and the days flew by so fast.  I know that is how it will be for the next two months.  That's the way it goes around the holidays.  Can you believe we are already in the second week of November?  Before you know it, Thanksgiving will be here and then Christmas and a whole new year.  My new goal is to try to enjoy every day and be present in the day.

Menu Plan: Week of November 6, 2011

Whew!  Last week was so busy that there were several nights we just grabbed something quick.  I just could not find time to get into the kitchen and cook.  As a mother, I felt some guilt feeding my kids fast food and frozen pizza, so I have made it my goal to have a very well stocked pantry and some meals in the freezer for the next time that I have zero time to get into the kitchen and cook a meal.

Recipe: Caramel Stuffed Apple Cider Cookies




I recently participated in a cooking challenge that used apples and caramel.  As I was browsing through all the recipes, I came across this cookie recipe on Lisa's blog, Cook Lisa Cook, and immediately new that I would be making them in the very near future.  And I did and I am so glad that I made them and took them to the admin staff at my kid's school.  They loved them, my family loved them and I thought they were fantastic!  A perfect cookie for the fall season and super easy to make.  I highly suggest that you give this recipe a try because you will not be disappointed and you will receive so many compliments it will make your pretty little head spin.

Caramel Stuffed Apple Cider Cookies
{adapted from the recipe by Cook Lisa Cook}
Ingredients
  • 1 cup butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 tsp salt
  • 1 box (7.4 oz) spiced apple cider drink mix (DO NOT use sugar free!)
  • 2 eggs
  • 1 tsp vanilla
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 2 tsp ground cinnamon
  • 3 cups all purpose flour
  • 1 bag (14 oz.) caramels

Instructions
  1. Preheat oven to 325 degrees.
  2. Line baking sheets with either a Silpat or parchment paper.
  3. In the bowl of a stand mixer, cream the butter, sugar, salt and the contents of all 10 packets of apple cider drink mix.
  4. Add the eggs one at a time mixing well after each addition.
  5. Add the vanilla and blend until mixed.
  6. Add the baking soda, baking powder, cinnamon and flour and mix until well blended.
  7. Using a medium cookie scoop fill the scoop level with the cookie dough.
  8. While the cookie dough is still in the scoop, press one unwrapped Kraft Caramel into the center of the dough and then pinch the dough to cover the caramel.
  9. Release the scoop of dough onto prepared cookie sheet placing about 2-inches apart.
  10. Bake 12-14 minutes, or until very lightly browned around the edges. Please don't over-bake!
  11. Once the cookies are done, allow the cookies to partially cool on the Silpat or parchment.
  12. When cookies are cool enough to be firm but still slightly warm, carefully remove from the Silpat or twist off the parchment and allow to finish cooling upside down on parchment. (I found that when I cooled them on the rack, it left indention's.)

Recipe: Bubble Up Enchiladas


I am always looking for quick, easy and tasty meals to make during the weeknights.  This dish fit the bill and bonus....it's Mexican.  I found this recipe on Nikki's blog Chef In Training.  If you have not stopped by her blog, you must check it out...she has some great recipes!

My family loved it and my kids thought the "bubbly" biscuits were cool.  The original recipe uses ground turkey.  My family does not like turkey so much, so I have tried it with diced chicken and once with ground beef.  My family enjoyed it with ground beef and I agree.  That is the beauty of this recipe, you can make it with what ever you have on hand.  This dish will definitely be on a regular rotation on our weekly menus especially when I don't have a lot of time but want to serve a hot delicious dinner to my family.

Bubble Up Enchiladas
(adapted from the original recipe by Nikki/Chef in Training)

Ingredients
1 lb ground beef (can also use diced chicken, ground turkey)
1 onion, diced
1 10 oz can red enchilada sauce
1 8 oz can tomato sauce
1 can refrigerated biscuits
1 1/2 to 2 cups shredded cheese (I used 1 cup of sharp and 1 cup of Mexican blend)

Directions
Preheat oven to 350 degrees. Spray a 9 x 13 casserole dish with non-stick spray and set aside.  Brown ground beef in a skillet, drain off fat.  Add onions and cook until tender, about 5 minutes.  Pour enchilada sauce and tomato sauce in with the meat and onions.  Mix well.  Cut biscuits into quarters and mix with meat mixture making sure to coat the biscuits with the sauce.  Pour mixture into the casserole dish and bake for about 20-25 minutes, or until the biscuits are no longer doughy.  Sprinkle cheese on top and return to the oven and bake until cheese is bubbling and melted.  Remove from the oven and allow to set for a few minutes before serving.  You can serve this with a dollop of sour cream on top of each serving.
